It's no secret that I love Indian food. It is my ultimate go-to comfort food. This has something to do with the fact that Indian cuisine is a party for the senses... the deep smells of at least a dozen fragrant spices blending together, the rich taste of creamy curries... from the first bite of crunchy salty papadam to the sweet smoothness of my finale of preference; cardamon rice pudding, the smells, tastes, and textures of Indian food keep every meal exciting.

I tend to seek out Indian Restaurants no matter where I am in the world. My Babymoon Vacation to St. Lucia in March was no exception. {I learned early on in my pregnancy that my twins had no aversion to spicy Indian food - for that I was thankful.}

While in St. Lucia, we were lucky enough to spend a few wonderful meals with the very engaging Chef Orlando from the famed Dasheene Restaurant at Ladera Resort. It was at his suggestion, that we met up for dinner at Spice of India in Rodney Bay. The meal was divine! The master chef takes full advantage of all of the fresh local ingredients St. Lucia has to offer. Being known as an island of spice, the fresh spices made a noticeable difference to familiar recipes.

Blanchard's - I think this is the only one you will need reservations for as it is considered the "best" restaurant on the island by many.

Straw Hat - Reservations might be a good idea here too.

I also suggest going to the Viceroy for sunset cocktails at their amazing sunset bar - the architecture of this hotel is stunning.

What to do in Anguilla? Enjoy these Anguilla Activities:

For a night out, visit Elvis' Bar in Sandy Ground - a great mix of locals + tourists... very low key, toes in the sand sort of evening, live music, and will give you a good glimpse at the local scene.

Take a day trip to Silly Cay. Or to Sandy Island.

Friday Night Fish Fry!

One of my favorite past times when in the Caribbean, is to hit up a local Fish Fry. Come Friday night, every island has at least a handful of locations offering tourists and locals alike, a taste of the day's catch, fried to perfection and served with all sorts of mouth watering sides.

The Anse La Raye Fish Fry in Soufriere, St. Lucia is one of the most popular ones, held right on the public beach in a casual, rustic style.

Luxury Fishing Lodge coming to Punta Cana

Fishing Lodge Cap Cana, located on the eastern tip of the Dominican Republic, will begin taking reservations in July and open to guests on Oct. 1, 2011. The resort will offer 302 Mediterranean-style villas, 220 of which will be available to resort guests. Accommodations will include three-bedroom royal suites, many featuring private infinity pools with swim-out access. Guests will also enjoy a secluded beach accessible via a two-minute ride by private watercraft.

The property is the first in Salamander’s Marina & Beach Resorts’ Grand Resorts at Cap Cana collection of hotels. Fishing Lodge will be located in a custom-designed village which surrounds what developers describe as the Caribbean’s largest inland marina. Amenities will include two restaurants, two bars, four pools, a chapel, fitness center, and boutique shops on Main Street and the resort’s plaza.

A second property, Ocean Club Cap Cana, will open in 2012 as a 92-room boutique-style hotel. The property will be open to “all guest types and stays,” including all-inclusive accommodations, according to the company. An Island Partners with its Favorite Star!

The Barbados Tourism Authority signed a three-year agreement with pop singer Rihanna, a Barbados native, to exclusively promote her hometown island of Barbados as a tourist destination. The partnership launches officially on Aug. 5 with a full-length concert on her current “Loud” tour.

A Little Truth About Seat Assignments

After 12 years in business, it is amazing that we are still learning the "tricks of the trade". Yet understandable, considering how drastically the travel trade has changed in the last 12 years. I don't normally use this blog to speak negatively about travel suppliers or relay the personal woes of our industry, but this most recent episode regarding seat assignments is worth sharing.

Pay attention to this statement: All airlines reserve the right to change your seating assignments at any time, for any reason, without warning or notice.

As agents, we have zero control over this process. At the time of booking, we select seat assignments for our clients, seating the entire party together on all flights where the seating chart is available to us. If a flight is particularly full at time of booking, or for random other reasons, sometimes the seating charts are not available to us. (or to the consumer on the airlines website) When this happens, we pass along the airline's message that seats will be assigned upon check-in at the airport and advise our clients to arrive a little early to ensure enough time to discuss seating at the ticket counter.

All of the above is manageable, until an airline edits the seating on a reservation where a minor is involved. Recently, this occurred and forced the separation of a family of three into 3 different rows and 2 different areas of the plane. The minor child was only two years old. Upon realizing this change, 3 weeks prior to departure, we called the airline to inquire and request our clients be moved back to their original seats. We were told there was no 2 year old noted in the record. I contested as I was holding travel documents that clearly stated "2 years old" next to the young man's name. The airline representative went on to inform me that they were showing this child as having a birth date in 2001 - and being 10 years old, which apparently the airline considers old enough to sit alone. Countless calls and emails up the chain of command at Continental Airlines and I was met with "NO" the entire way and repeatedly told that the plane was full and the clients would have to be reassigned at the airport on the day of travel. No apology.

As a mother, I understand the enormous amount of stress and anxiety of having to wait until arrival at the airport, not knowing if you will be able to sit by your child on the longest leg of your 16 hour journey from the West Coast to the Caribbean.

Fast forward to the client's post-travel report and as feared, the situation was not resolved in a satisfactory manor. Continental was unable to rebook the child near a parent until 15 minutes before the flight departed and after all other passengers where seated. And even then, the other parent was in another section of the plane causing more stress because Mom had been depending on Dad's help with the two year old since it was his first time flying.

It is most upsetting that we are increasingly being shown airline passengers have really no rights. These clients booked their trip 4 months in advance, when the seating charts on each leg were wide open. We did our job and selected adjacent seating at time of booking. It appears Continental ran into a seating issue and in order to move the 2 year old away from his parents, someone changed the child's birth date so it wouldn't cause any alarm. Whether this was intentional or not, it is NOT acceptable.

Continental is not a discount airline, but a competitor with all other major full fare airlines. Their lack of assistance in helping this family is shocking. New St. Lucia Airport Development Tax

The Saint Lucia Air and Sea Ports Authority (SLASPA) wishes to inform all travelers that effective May 1st, 2011, the sum of US$35.00 will be included on all airline tickets purchased worldwide for voyages to and from St. Lucia.

I have verified with the St. Lucia Tourist Board that this is not a departure tax, as is common on other islands, but in fact a tax to help the island further development their existing airports to serve a growing number of visitors to the island. Other islands have been adding a "departure tax" to airline ticket costs for years so if you've visited the Caribbean, you've likely already been paying similar taxes. With the launch of this new tax in St. Lucia, we are excited to see the upcoming changes at the airports.

My Visit to Calabash Cove - St. Lucia

Calabash Cove is a new boutique hotel in St. Lucia. I had the opportunity to visit this little gem on my recent babymoon vacation on the island.

This is the view from the lobby, looking over the restaurant... every table has a view of the turquoise sea:

This shot is looking up at the main lobby & restaurant from the pool deck. The bottom floor rooms, cloaked in greenery, are the hotel's "swim-out" category:

Beneath the main pool deck, but still within easy walking distance of the pool bar, is another level for relaxation and sun bathing:

As we strolled the property, the bright florals of the gardens had our full attention....

We finished our tour with a delicious meal at the hotel's signature restaurant. The menu changes frequently to keep the options fresh:
